A highly anticipated new restaurant near the Mall at Wellington Green is set to open next week.
Don Chepo’s Taco Shop, in the Fresh Market plaza, will have its grand opening from 5 p.m. to 1 a.m. Nov. 9, with regular hours kicking off Nov. 10 from 11 a.m. to 1 a.m. daily.
The taco joint is the latest offering from Wellington-based Fashion Cuisine Group, which also owns Oli’s and The Grille. Where Fashion Cuisine’s other restaurants are higher-end fine dining, the group’s owner-partners want Don Chepo’s to have more of an affordable menu.
“They want this to be something where a family can swing by after practice and have four to five people eat affordably,” Kelly Colbath, Fashion Cuisine Group marketing manager, told The Palm Beach Post last month.
The restaurant’s menu includes tacos that come in pairs sold for $7, $8 or $9. Quesadillas run from $9 for tortillas stuffed with Cotija and Chihuahua cheeses, to $10 to add chicken or pork.
The menu also includes a variety of appetizers, including tamal al pastor, a smoked pork dish with caramelized onions, pickled peppers and Cotija cheese, tostadas and desserts.
Don Chepo’s had a booth at Wellington’s Green Market last month where curious residents could try a sampling of tacos, tortilla chips, salsas and guacamole. Among the featured tacos was one that has been adapted into a tostada for the permanent menu: butternut squash with lettuce, pico, Cotija cheese and salsa verde.
Diners can sit on a patio outside, or inside at private tables or a community table. Don Chepo’s grows herbs and vegetables in planters around the patio to use in its dishes.
