Bolay, the popular bowl-centric restaurant, has just opened a new eatery. In just a little more than a year from opening their location at Boca Raton’s Polo Club Shoppes, a new Bolay has opened on Okeechobee Boulevard in West Palm Beach, just west of I-95 (in the previous location of Aleyda’s Mexican Restaurant).
The secret of Bolay’s success? It’s all in the components, both in food and in staff, says Chris Gannon, Bolay’s president and co-founder, and son of Outback Steakhouse co-founder Tim Gannon.
The restaurant’s concept is focused on clean, nutritious eating, offering a selection of grains, vegetables and meats for customizable bowls. Beyond the ordinary range of salads, the restaurant builds bowls that are filled with nutrient-rich ingredients, such as Peruvian quinoa, roasted butternut squash, smoky cauliflower and a variety of lean, flavorful meats.
Haven’t been to a Bolay? Here’s how it works: Walk along the food line and choose from an array of 26 specialty items – categorized as bases, veggies, proteins, toppings and sauces – to create your custom “bol.” To drink, there are cold-pressed juices, teas and other beverages.
