Cabana Bay lounge at Universal Orlando is mad about retro cocktails

Everything old is new again at Cabana Bay Beach Resort — Universal Orlando’s retro-themed hotel — and that includes the cocktails.

When food-and-beverage director Phil Klinkenberg began crafting the drink menu for the 1,800-room resort’s Hideaway Bar & Grill, Galaxy Bowl and Atomic Tonic poolside bar, he drew inspiration from a vintage placemat featuring clip art of the most popular mid-century drinks: Side Cars, Manhattans, Gimlets.

“It was a simpler time, alcohol-wise,” says Klinkenberg, whose 21st century twists on the classics included using Jim Beam Jacob’s Ghost White Whiskey in the New Old Fashioned.

Among Cabana Bay’s offerings is this three-rum punch, served in the “Mad Men”-ready Swizzle Lounge, across from the check-in desk in a lobby punch-drunk with color.

SWIZZLE RUM PUNCH

1 ounce Bacardi Gold rum

1 ounce Bacardi O orange rum

1/2 ounce creme de banana

1/2 ounce blackberry brandy

2 ounces orange juice

2 ounces pineapple juice

1/4 ounce Bacardi 151 rum

Orange wedge

Pineapple wedge

Pour all ingredients over ice, except for the Bacardi 151, and shake in a tumbler. Top with 151, and garnish with orange and pineapple wedges.
