DELRAY BEACH — Doctor Doodle’s Donuts shop on bustling Atlantic Avenue will be a place of fantasy — and tasty baked goods.

That’s what the owners of the soon-to-open bakery promise of the newest addition to downtown Delray Beach.

Situated between Lemongrass Bistro and Aqua boutique on Atlantic Avenue near Southeast Fifth Avenue, the doughnut shop is under construction but expected to open in mid-February, said co-owner Neil Koppel.

“The best way to describe it is a cross between ‘Harry Potter’ and ‘Willy Wonka,’ ” Koppel said of the shop, which will bake doughnuts, muffins, cookies, and breads from scratch, serve fresh-roasted coffee, and boast a colorful and whimsical decor.

Delray Beach architect Shane Ames designed the interior of the shop.

Koppel and partner Edward Rosenberg created a fantasy background story for the shop, in which Doctor Doodle is a Delray Beach settler from Vienna on a quest to find the perfect doughnut. When he couldn’t find it, he made it instead. The business partners even created a book detailing Doctor Doodle’s biography.

Koppel, whose background is in commercial baking, said the shop will offer specialty doughnuts with dough, jellies, creams and other fillings and toppings made entirely in-house.

“You’ll have that old-timey European bakery feeling the minute you walk in,” he said. “It’s a visual experience. And obviously, the smells and tastes won’t let you down.”

The doughnut shop will offer vegan and gluten-free options, as well as dog treats. But the detailed menu isn’t ironed out, Koppel said.

Doctor Doodle’s Donuts will have two pickup windows — one out front for Atlantic Avenue customers, and one out back facing the under-construction iPic movie theater.

And inside you’ll find a glass window so passersby and patrons can peer into the bakery and watch the fresh goods being made.

“It’s not your typical bakery,” he said.

The location is prime real estate on the bustling downtown thoroughfare, and Doctor Doodle’s will be the first doughnut shop on Atlantic Avenue. Koppel and Rosenberg polled visitors of Delray Beach’s Saturday Green Market to find out if a doughnut shop was desired on Atlantic Avenue before launching into the venture.

“People were so excited, we got hundreds of email addresses asking us to be invited to the grand opening,” Koppel said.
