Wayne Biederman planned to slow down after selling the Original Pancake House in North Palm Beach after 13 years and a lifetime in the restaurant business. But that all changed when he woke up one morning, decided he wasn’t ready to retire and found his next calling in the making of delicious goat cheese.
“When I became involved in the goat cheese, I really felt it was a calling for me,” Biederman, 64, said. “I really feel like it was something I was meant to do.”
At first, he partnered with a close friend, with a shared goal of making goat cheese accessible and popular in the domestic market.
“It always seemed to be a snooty product to a lot of people,” said Biederman, who lives in Juno Beach. “They thought it wasn’t really an American product they would enjoy. I set out to change that.”
Biederman and his partner amicably parted ways and he adopted the name Quiet Creek Products. Today he receives goat milk and cheese from co-ops in mid-state Florida and he uses a proprietary system to whip the product before adding flavors, which creates a sweeter and creamier product. He then flavors the cheese with all-natural fruits, spices and herbs. He dehydrates the fruit, so the goat cheese doesn’t end up too soupy.
“It’s a very subtle enhancement,” Biederman said. “I experimented with a lot of different things. Recently I added chocolate and that’s a very big hit. I have nine flavors and they all have their own niche.”
The cheeses can be bought at different green markets. Currently he participates at the Palm Beach Gardens Summer GreenMarket at STORE on Sunday mornings and he’ll be selling his popular cheeses at the West Palm Beach, Lake Worth and Tequesta markets when they start up for the season. He also appears at the Williams-Sonoma shop at The Gardens Mall in Palm Beach Gardens as part of their Artisan Showcase.
He initially was drawn to goat cheese for its versatility and uniqueness.
“I just thought it was an under-appreciated product, I really did,” Biederman said. “I have done so many, many things over the years with it.”
In addition, the health properties attract the interest of clients as well. The product is made with no additives and no artificial ingredients.
“If you look at the numbers, goat cheese is half the fat, half the calories, half the cholesterol and twice the protein of cow’s milk,” he said. “I have a kind of philosophy: ‘one taste and I’ve got ya.’ What happens probably 98 percent of the time: You try it once and you become a believer.”
