This week’s bar: Mellow Mushroom
The scene: Diners who recall the cocoonlike interior of Kona Grill on CityPlace’s south end won’t recognize its former space, occupied since January by Mellow Mushroom. The owners of the second Palm Beach County outpost of the Atlanta, Ga.-based chain of pizza bakers effectively threw open the windows, turned on the lights and coated the place in fluorescent colors, creating a trippy, theme-park ride of a restaurant. The patio has been transformed into a setting for Tuesday-night trivia and live music on Sunday, Monday and Thursday nights.

1 1/4 ounces Appeton Estate VX rum
1 ounce fresh lime juice
3/4 ounce Monin coconut syrup
8 mint leaves
1 ounce Fever Tree ginger beer
Combine rum, lime juice, coconut syrup and mint leaves in a shaker with ice. Shake vigorously and strain into a glass, rimmed with the toasted coconut and filled with ice. Top with ginger beer and garnish with the mint sprig.
