The scene: With a spacious dining room, seating at the bar and a breezy terrace along Sunrise Avenue, you can choose from a few different kinds of experiences at Echo — from casual to celebratory, from quick to lingering. And while the sushi restaurant is owned and operated by The Breakers, it must be noted that on a couple of recent visits, the service was not up to Breakers’ standards.

Canton Ginger Sidecar
2 1/2 ounces Domaine Canton Ginger Liqueur
1 ounce fresh lemon juice
1/2 ounce Cointreau
1 big pinch of fresh grated ginger
Shake all liquid ingredients and the ginger well. Pour into a chilled glass with a raw sugar rim.
