5 earthy, crunchy spots for devouring Earth Day

What day better than Earth Day to devour the fruits of the soil, branch and vine? You don’t have to be a strictly plant-based devotee to celebrate the goodness of a top-notch veggie and grain bowl or even a glass of fresh, vibrant juice.

Here are five places that will indulge your earthy, crunchy Earth Day whims. They are listed from north to south county:

CHRISTOPHER’S  KITCHEN

This is the premier local spot for plant-based delicacies. From the spicy bowls to the decadent pizzas to the luxurious nut-based ice “creams” and “mylks,” Christopher’s Kitchen keeps even diehard carnivores coming back to its easy, stylish world. The restaurant serves lunch, dinner and brunch (Saturday-Sunday), and offers beer and wine.

4783 PGA Blvd. (Midtown plaza), Palm Beach Gardens; 561-318-6191

MERAKI JUICE KITCHEN

Welcome to Christopher’s Kitchen’s more casual younger sibling. Meraki Juice Kitchen offers terrific grab-and-go options, acai bowls, juices, tonics, smoothies and delicious avocado toast. Add a few wraps, rolls and other casual bites (plus beer and wine) and you’ve got a nice lunch spot. A second Meraki Juice is planned for the Jupiter area.

328 Fern St., West Palm Beach; 561-508-6640

ISLAND BEE

The Bee, the most health-minded spot on Palm Beach, houses an organic market, a juice bar and vegan café. At the café, there’s a daily soup, bowls, wraps, panini, salads and plenty of takeout options. After lunch, browse the market and check out the locally handmade jewelry.

261 Royal Poinciana Way, Palm Beach; 561-619-3657

DARBSTER

Here’s a spot that loves your pooch almost as much as you do. Darbster is not only dog-friendly, it devotes its earnings to animal rescue causes. The restaurant offers plenty of outdoor seating where one can enjoy its vegetarian and many raw offerings, plus wine and beer. There’s a happy hour every weeknight (5 to 7 p.m.), dinner Tuesday through Friday (5 to 10 p.m.), Saturday-Sunday brunch (10:30 a.m. to 3 p.m.) and dinner (5 to 9 p.m.)

8020 S. Dixie Hwy, West Palm Beach; 561-586-2622

THE NEW VEGAN

This family-owned, Delray Beach café is devoted to spreading the word about the nutritional benefits of a vegan lifestyle. Most of the dishes at The New Vegan can be ordered raw or cooked. The menu includes sandwiches, salads, even a considerable range of veggie burgers. Plenty of desserts, too!

528 NE 2nd St., Delray Beach; 561-404-5301

Students dream up sweet, 'smart' take on chips and dip

Creating a recipe "from scratch" can be hard to do - or a piece of cake, as a team of six students at Washington Irving Middle School in Springfield, Virginia, found out recently. They had to come up with an original after-school or breakfast "smart snack" that was healthful yet tasty enough that their friends would want to eat...

Eats like a pizza but takes less time to make and bake

Pizza-type meals are easy to pull together on a weeknight, as long as you plan ahead for dough or keep the store-bought, refrigerated bags of it in stock. But this recipe from John Whaite's new book, "Perfect Plates in 5 Ingredients" reminds us of another way to go. In it, you make a dough with self-rising flour (which contains baking powder...

Mushroom, spinach quesadillas a quick spring treat
Mushroom, spinach quesadillas a quick spring treat

Mushrooms, spinach and cheese fill tortillas for this quick vegetarian dinner. Sliced mushrooms, shredded cheese and washed spinach are supermarket staples that make food preparation for this dinner a breeze. The mushrooms and spinach are cooked in a microwave oven so only one skillet is needed to complete the meal. Frozen corn and canned black beans...
